
KBB #8: Bitter Peppermint Chocolate Biscuits, hosted by Ellen of Chicken's Kitchen.

I think the shortbread is rolled too thick, the filling is too runny. I am not sure what had got into me that day. Everything was gone wrong. I halved the shortbread when I saw that the biscuits turned out to be way too high and too big for my size. Turned out alright, but the chocolate coating was too thick. Perhaps I am too fussy.

I like the combination of the flavour though. I cut the sweetness of the shortbread by using 50g of caster sugar only (recipe can be found here). For the chocolate coating, I use dark chocolate 72%. I think the combination of not-too-sweet shortbread, peppermint filling and bitter dark chocolate is quite pleasant.

My Review:
I'd rather have two layers of biscuits rather than three as I don't think I can roll the shortbread thinner than that. The bitter chocolate coating is an excellent accent for this shortbread. It compliments the peppermint flavour. However, I am not sure if I will return to this biscuit again.

I understand exactly what you mean about recipes sometimes. Especially when it comes to baking being almost an exact science. At least you had a go. The flavour combination sounds scrumptious though!
kalo aku suka kombinasi rasanya Fi, cuma memang biskuitnya terlalu tipis, dan kalo ditumpuk dua aja udah cukup. frosting nya memang terlalu runny ya...lain kalo mau bikin lagi, tapi mau pake rasa lain :)
gue juga cuman 2 layer, Fi. 3 tebel banget deh perasaan.
Love the last photo. I was intrigued by the 3 layers in the biscuit, but like you said, perhaps 2 layers would suffice. But I must say, chocolate and peppermint sounds like a winner! :P

sy dibikin 3 lapis mba.. hehehe.. maklum doyan yg manis2. Tapi tetep sih, ada 1 loyang yang dimakan tanpa coklat dan icing. enaakk kriuk2 :D
Punyaku tak tumpuk 3 juga....tebelll banget, musti buka mulut lebar2, fillingnya kurang kentel jadi waktu di oles rada meleber. Fotonya mbak Arfi seperti biasa..selalu TOP!

iya fi, lapisan peppermintnya emang terlalu runny. Tapi klo cuman biskuitnya tanpa icing en coating dirumah laris.

* aku tetep nggak tega wkt mo buat 3 layer, karna terbayang betapa tebelnya. Coatingnya coklat gelap gitu mbak arfi, keren. Mungkin karna penggunaan dark chocolate yg 72% itu kali ya..

Arfi, I checked the link you have given for the recipe but there is no translator to translate it. However, I love the combo of peppermint and chocolate and the pictures look great.

That's why I prefer cooking to baking, but honestly, they look great anyway. I'd definitely take them off your hands if I were there!

Looks pretty good to me. Your roses look fabulous I have had a good flowering as well but I have just dead-headed now awaiting the next lot of flowers.

Same here... I'm not sure whether I'll make the biscuit using this recipe. It's kinda disappointing as overall result.
mbak arfi..biscuitnya tebel banget ya...kapan2 kalo buat lagi emang bener gak usah 3 lapis..and gak usah pake peppermint..abis kayak makan odol..hehehhe
